Ingredients

For Vanilla Cake

  • 1 3/4CupAll Purpose Flour
  • 2Large Eggs
  • 6Tablespoonunsalted melted Butter
  • 1cupsugar substitute (Swerve or Splenda)****please see notes
  • 1Teaspoonbaking soda
  • 1Teaspoonbaking powder
  • Pinch of salt
  • 1Cupskim milk
  • 1Tablespoonvinegar
  • 2teaspoonsvanilla extract

For Chocolate Frosting

  • 1Tub of whipped topping (sugar free)thawed
  • 1 - 1ozpacket of chocolate fudge instant pudding (sugar free)or any other flavor you may like
  • 1/4cupskim milk

US Customary - Metric

Instructions

  1. For cake

  2. Mix the milk and vinegar and let it sit for 10 minutes (it will turn into buttermilk)

  3. After 10 minutes, mix well with a spoon

  4. Preheat oven to 350 degrees Fahrenheit

  5. Spray the inside of a 6" cake pan with nonstick spray

  6. Add a little flour inside the pan and round it alongside the whole surface. Discard the excess flour

  7. In a bowl, mix the flour, sugar blend, baking soda, baking powder and salt

  8. In another bowl, mix the egg until foamy, add the butter and mix until creamy

  9. Alternate adding the buttermilk and dry mixture into 2-3 batches, starting and finishing with the dry ingredients. Mix well between each addition

  10. Lastly, add the vanilla and mix

  11. Pour the cake batter in the prepared pan

  12. Bake for 30-40 minutes or until a toothpick inserted in the middle comes out clean

  13. Remove from the oven and let it rest for 20 minutes on a rack

  14. Unmold and let it cool completely before frosting

  15. When cake is completely cooled, slice it in the middle to create 2 layers

  16. For Chocolate frosting

  17. In a bowl, mix everything together using an electric mixer

  18. If frosting seems too stiff, add some more milk until creamy

  19. Assembly

  20. Place frosting in between the layers of the cake

  21. Cover with the second layer

  22. Frosting the top and sides of the cake

  23. Enjoy!

*If using Zing, reduce the amount of sugar to 1/2 cup.
Double the ingredients for a 9" cake. Baking time may change as well
