I’m always looking for creative ways to use leftovers. I hate wasting food, so I like to stretch my leftovers as far as I can. Leftover vegetables can be tricky because they sometimes get a little limp in the fridge. I compiled this list of leftover vegetable recipes with ideas to help bring your “on their last legs” cooked veggies back to life. I’ve also included several recipes for using up vegetables you have in the fridge before they go bad.
