Vegan French Onion Soup Recipe - The Herbeevore (1)

I have made a lot of recipes on this blog, and I don’t think anything has earned the title of EPIC yet… until this amazing vegan French Onion Soup. My husband and I LOVE French food – we took a trip to Lyon a few years back and it was definitely a food-based vacation. The food in Lyon really just ruined any other dining experience for me, nothing has compared to the little bistros, 3 course meals, and bottles of French wine.

Luckily, we have found some great French restaurants in our area which are perfect when we are feeling like indulging. Pot Au Feu in Providence, RI is outstanding (definitely our favorite ‘splurge’ restaurant… which also has a vegan menu!), and La Voile in Boston is also a favorite.

Make French Onion Soup Vegan for a Plant-Based Version

This vegan French onion soup is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make better meals for you and your family.

What’s In Vegan French Onion Soup?

See the recipe card below for full ingredient amounts and recipe instructions!

  • Onions, Thyme
  • Extra Virgin Olive Oil
  • Low Sodium Vegetable Stock – I like to use this low sodium vegetable stock for my recipes because it has great flavor… without all the salt. I always use low sodium or no-salt-added broth or stock to start, and then I can add salt or other spices later if needed.
  • Vegan/Gluten Free Bread – use a gluten free bread if you can’t eat wheat. I like to make my own bread, and they have some great artisan bread gluten free mixes out there too!
  • Parmesan Substitute for a vegan version! – gives that extra bit of flavor and richness to this dish. A vegan version adds a little extra into the soup (and for garnish) makes this dish delicious.

Dairy Free French Onion Soup for the Win!

Onions absolutely shine in this recipe, and with the few other simple ingredients transform into an amazing, flavorful, and rich soup.

It’s a little time consuming cook down the onions, but let me tell you it is WORTH IT. This is a great recipe for when you want something fancy and have a few extra hours to spare in the kitchen (doesn’t happen too often, but I’ll take them when I can get them)!

Rave reviews for this recipe, I cannot wait to make this again! It was just as good as the restaurant and almost as good as being in actual France 🙂

FAQs

How do you deepen the flavor of French onion soup? ›

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depth—don't worry, it won't taste fishy—and a hit of cider vinegar to balance some of that oniony sweetness.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

What is the difference between onion soup and French onion soup? ›

What is the Difference Between Onion Soup and French Onion Soup? French onion soup is always made with beef stock. Other onion soups can be made with chicken, vegetable, or beef stock. Additionally, French onion soup typically contains wine or sherry, which isn't typical or necessary in other onion soups.

Why does my French onion soup taste like nothing? ›

Lack of seasoning: Seasoning is crucial in any dish, and French onion soup is no exception. If you don't add enough salt, pepper, or other herbs and spices, the soup may taste bland.

What spices add depth to soup? ›

"Ground paprika, turmeric, nutmeg, ground ginger, and other powdered spices add a touch of color and spiciness to broths," she says. As a general rule, use fresh herbs at or near the end of cooking and dried herbs and spices early on. This helps you get the flavors you're looking for in the right balance.

How do you get the bitterness out of onion soup? ›

Dairy products such as milk or cream can help to mellow out the strong flavor of onions. You can add a splash of milk or a dollop of cream to your soup to balance the taste.

What makes French onion soup taste rich? ›

French onion soup is traditionally topped with Gruyère, but other cheeses can be used. Most French onion soups are topped with three cheeses for maximum decadence. This recipe calls for Parmesan, provolone, and Swiss. Other popular choices include Fontina and mozzarella.

What is the best wine to use in French onion soup? ›

Wine is optional to deglaze the pan and add flavour to the soup. I recommend a dry white or red wine, such as a good quality Pinot Grigio/Gris, Sauv Blanc, Sémillon, Chardonnay, Merlot or Pinot Noir. Generally, if you can't drink it, don't cook with it.

How do you thicken French onion soup? ›

The easiest way to thicken your French onion soup is with flour. You can also use cornstarch if you don't have any flour. Remember to never add the flour or cornstarch directly to the soup – otherwise you run the risk of it clumping.

Why is French onion soup so expensive? ›

First, French onion soup calls for a ton of onions. While onions aren't expensive, there's a lot of labor involved in halving, peeling, and slicing 10, 12, 50, or one billion onions (I don't know how much soup you make).

What broth is French onion soup made of? ›

This soup traditionally is made with beef stock, though sometimes a good beef stock can be hard to come by and expensive to make. If you use boxed stock, taste it first! If you don't like the taste, don't use it. (If you cook a lot of beef or beef roasts, save the scraps and freeze them to make a stock with later.)

What kind of onion is best for soup? ›

When you are sauteing onions to build flavor as a base for your dish (soup, tomato sauce, you name it), the yellow onion is your friend. That being said, white onions are a totally acceptable substitute for yellow, especially if you're cooking them.

How to deepen the flavour of French onion soup? ›

Add the sherry, then taste and adjust seasoning if necessary. If the soup needs a deeper flavor, try a few shakes of Worcestershire sauce. If it's not quite sweet enough, add 1/4 teaspoon sugar. While the soup simmers, preheat the oven to 400°F and set an oven rack in the middle position.

Why do you add flour to French onion soup? ›

Onion soup, at its very essence, is nothing more than onions and water boiled together. Period, done, finished, everything added from that point on is pure opinion. Caramelizing the onions brings out sugars, and makes a more luxurious silky and sweet soup, adding flour gently thickens and provides body.

Why do I smell like French onion soup? ›

Bromhidrosis is a disease that occurs when the bacteria on your skin breaks down sweat and produces an abnormally offensive smell similar to onions or sulfur. Bromhidrosis body odor is more pungent and persistent than ordinary B.O. There are two types of bromhidrosis: apocrine and eccrine.

How to doctor up canned French onion soup? ›

Infusing the soup with a richer taste is as easy as quickly sauteing crushed garlic before pouring the soup in. Some soft, buttery garlic sauteed in earthy olive oil is the perfect addition to enrich canned French onion soup.

How do you make soup taste stronger? ›

Perk up a Bland Soup With Simple Pantry Staples

Add a splash of vinegar (any kind!), or a squeeze of citrus. Chances are, you could use a little more salt. Go ahead—it's ok. Salt perks up flat flavors and helps balance out bitter-tasting ingredients.

How do you get the depth of flavor in vegetable soup? ›

Dried herbs and seasonings: homemade seasoned salt, black pepper, Italian seasoning, and dried bay leaves lend flavor to the soup. Stock: I much prefer chicken stock over vegetable stock in terms of flavor, though if you want to keep this soup vegetarian, feel free to use vegetable broth or stock instead.
