22 Artichoke Recipes That Go Beyond Spinach Dip (1)

What do you imagine when you think of cooking with a gorgeous artichoke? Spinach and artichoke dip, perhaps? Yeah, us too—it’s our go-to dip for everything from summer BBQs to fall game days. We’re here to tell you, though, artichokes are SO much more versatile than just for mixing with spinach, cream cheese, mayo, and sour cream (mmm). Whole artichokes are great on their own (don’t be intimidated!), or you can put artichoke hearts in everything from spring salads to hearty sandwiches to great effect. Check out our best artichoke recipes for ideas—we see more of this spiky vegetable in your future!

We imagine you are already super familiar with the wonders of spinach and artichoke dip, but just in case you’re not, you’ve gotta try ours. It’s also a flavor combo that shouldn’t be relegated to just dip. We’ve included recipes here for chicken, spinach, and artichoke pasta, spinach and artichoke-stuffed peppers, and spinach and artichoke zucchini bites, but check out our list of all our favorite spinach and artichoke-inspired recipes too.

Not a huge fan of the famed dip but still want to enjoy more artichokes in your life? Buy whole ones, and grill or roast them. (Hot tip: As you're cleaning them, keep dipping the freshly cut parts into lemon water to slow oxidization and browning.) Then pair their leaves and hearts with everything from a simple butter dip to spicy mayo (our grilled recipe has a pistachio-yogurt cream you’ll love). You could also just use store-bought artichoke hearts, canned or jarred in oil or water. We’ve included a number of antipasto salad recipes that rely on the hearts, including a vegan and chickpea-based one, as well as antipasto-inspired appetizers, like our antipasto bites and picks. They’re a great addition to Italian food too, like our Italian pasta salad, our Italian club sandwich, our angel hair pasta primavera, or our vegetarian Italian sub. Try sneaking them into any of your old standbys—they'll add a herby, briny flavor that'll make anything taste extra fresh.
